In 2006, we introduced our Berkshire Prosciutto, the first single-breed prosciutto made in the USA. The response from chefs, food critics and writers was exuberant. La Quercia Berkshire Prosciutto is crafted from prized heritage breed Berkshire pork known for its tenderness, deep red color, and profound meaty flavor. The muscle fibers are shorter than in most breeds, making Berkshire pork rich and silky once cured.
