In 2006, we took on another challenge in our ongoing quest to create delicious and extraordinary eating experiences: we introduced La Quercia Rossa Prosciutto, the first single-breed prosciutto made in the USA. The response from chefs, food critics and writers was exuberant. La Quercia Rossa is crafted from prized Berkshire heritage breed pork known for its tenderness, deep red color, and profound meaty flavor. The muscle fibers are shorter than in most breeds, making Berkshire pork rich and silky once cured.
Working to follow our humane standards we work with selected farmers from Eden Farms in State Center, Iowa.
