Prosciutto Americano, released in 2005 to critical acclaim and appreciation, was our first creation and remains our most  popular.  The meat has a sweet, clean flavor and a floral minerality. The humanely raised, antibiotic-free meat comes from Niman Ranch and farmer-owned Heritage Acres.


Over the last several years, we have added Speck, Prosciutto Piccante, Pancetta (rolled and flat), Coppa, Coppa Piccante, Guanciale, Lomo, Salami Americano, 'Nduja and our Borsellino Salamis to our Americano offerings.
