Prosciutto Americano, released in 2005 to critical acclaim and appreciation, was our first creation and remains our most  popular.  The meat has a sweet, clean flavor and a floral minerality. The humanely raised, antibiotic-free meat comes from Niman Ranch and farmer-owned Heritage Acres.

 

Over the last several years, we have added Speck, Prosciutto Piccante, Pancetta (rolled and flat), Coppa, Coppa Piccante, and Guanciale.
